Le Logge extravergine olive oil is obtained exclusively from the olives grown on Giorgio Filipponi’s estate.
Within a few hours of the harvest, our olives are brought to the mill where, applying a continuous-cycle system, the oil extraction takes place :
1 - First the washed, leafless olives are crushed into a fine paste by large granite millstones.
2 - Afterwards, the paste is pumped into a decanter where the liquid part is separated from the solid material.
3 - In the last phase the oil is separated from the vegetation water.
The extravergine olive oil is brought back to Giorgio Filiponi’s estate and stored in a climate-controlled area.The oil is kept in large steel tanks at 12 °C.
